Breakfast, kick off your morning right!

Breakfast has always been a must! My mom never let us leave the house before school without eating breakfast. Although I am older now, this is one of those rules I still follow. I believe that starting my day off with breakfast, gives me the kick start I need to begin the day.

I usually like to start my day with yogurt with fruit and granola, a warm bowl of GF oatmeal, or egg-whites. However, another enjoyable breakfast option is Van’s gluten-free waffles. I like to think of them as the “g-free Eggo waffle” (only better!) Van’s GF waffles are great! Not only does Van’s have natural waffles. They also have kinds such as buckwheat with berries, apple cinnamon, blueberry and flax waffles. I have tried all the different kinds (except for the Flax waffles), and they are all so good. It’s too hard to pick my favorite!

Not only are Van’s GF waffles gluten-free, but they are also dairy and egg free, and are made with whole grains. Since I don’t like maple syrup I always enjoy these waffles with So Delicious vanilla coconut milk yogurt or my mom’s homemade applesauce.

Note: Van’s also makes regular products, so be sure to pick up the ones that are labeled gluten-free/wheat free. (blue label)

Canyon Bakehouse Focaccia

This Christmas, I received many kitchen appliances. My family and I often joke that by the time I get married and have a wedding shower, I will have everything I need! This Christmas my brother got me a

in 1 griddle. I love this appliance and use it weekly at school. I use it to make things like grilled cheese, pancakes and just this week I made a panini using Canyon Bakehouse Rosemary & Thyme Focaccia!

Canyon Bakehouse’s hamburger buns, 7-grain and cinnamon raisin bread and was excited to try out their focaccia. The first time I had the focaccia I made a panini using grilled chicken, grilled red peppers and Rice mozzarella shreds. Initially, when I had this bread I thought the rosemary and thyme was a little too strong (I think I had too many different flavors on the bread at once), however when I had the bread for a second time with a little bit of butter, I loved it! The bread itself had a good flavor, was very moist, and was very suitable for a panini. It comes frozen, so just let it sit out to defrost and you are ready to go. No heating necessary! Next time I think I am going to make pizza using the focaccia

I Scream for Ice Cream!

Last night for some odd reason I had a craving for ice cream. This was really weird for two reasons. First, because it was so cold out last night, and second because I NEVER eat ice cream!

Because I never eat ice cream I decided to go all out. Not only was I going to have ice cream, but I was going to make a past time favorite, cookies and cream in a cone! To make this creation I used So Delicious Vanilla Bean Coconut Milk Ice Cream.  After going GF milk started to bother me, so I started using this ice cream, since it is dairy-free. I was introduced to this ice cream by my cousin. At school, she lives with vegans and told me, if I very wanted to try a DF ice cream, skip rice or soy ice cream and head straight for coconut milk ice cream. Although, I have only tried one flavor so far, I really enjoy this ice cream’s creamy taste.

To make the cookies and cream ice cream I scooped out the vanilla ice cream and crushed one  Mi-Del Chocolate Sandwich Cookie and mixed it into the ice cream.  I then put it into a Goldbaums GF sugar cone.  The GF sugar cone had an indistinguishable taste from its gluten-filled counterparts. Ironically,  before when I ate cones I would only get wafer cones because I did not like sugar cones. However, I think that the GF sugar cones have a much better taste than the GF wafer cones. The Mi-del cookies where good too, the cookie was crunchy with a great chocolate taste.

Note: Mi-Del states on their packaging that they recently revised their recipe and these cookies now have a new and improved taste. However, this was the first time I had these cookies, so it did not make a difference to me!

Valentine’s Day Brunch

Brunch is a favorite among my friends and I up at school. Instead of walking down to the Cafeteria yesterday morning I decided to make apple sauce pancakes for everyone.

For Christmas I received a King Arthur’s gift card, and recently purchase some of their GF products (along with a donut pan!). This was the first time I tried anything from King Arthur, so I didn’t know how the pancakes would turn out.

King Arthur GF mixes are made in a dedicated facility and are free of the 8 most common allergies. In addition to the mix the recipe called for butter or oil, 2 eggs and 2 c. of milk. I chose to use oil and substituted the milk with water.

Since I was making apple sauce pancakes I added 1/3 cup of my mom’s homemade apple sauce (natural store bought apple sauce works well too), 1 tsp vanilla and 1 tsp. cinnamon.

I was a little concern after opening the mix, because it had a strong smell that I wasn’t a fan of. I didn’t know how they would turn out. However, these pancakes were really good. This pancakes were, fluffy and had a great texture and flavor. My friends ( all gluten eaters) have had many of my GF pancake mixes, and these were their favorite!

In addition to making 4 large hearts, I was able to make 12 small pancakes ( the box states it yields 16 4 inch pancakes). I froze the leftovers so that I can enjoy them without having to make a whole batch of pancakes.
