Crunchy Chocolate Chip Cookies

I did A LOT of baking over Easter weekend, and wanted to share another great recipe with you all. My crunchy chocolate chip cookies are loved by so many. These are my favorite cookies that I made in my pre-gfree days. Now with Jules GF flour it is once again possible to make these cookies! No longer do I have to watch others indulge in a past time favorite.

Candice’s Crunchy Chocolate Chip Cookies
3 1/2 c. of Jules GF Flour
3 tsp. baking soda
1 tsp. salt
1c. Earth Balance
1 c. packed brown sugar
1 c. evaporated cane juice
1 egg
2 tsp. vanilla
1 c. vegetable oil
1 1/2 c. gluten free corn flakes
1 1/2 c gluten-free oats
1 (12 oz) pkg. chocolate chips

Mix flour, soda and salt. Cream butter and sugars. Beat in egg and vanilla. Stir in flour mixture, alternating with oil, until all is thoroughly mixed. Stir in corn flakes, oatmeal and chips. Chill dough for an hour, or over night.

Preheat oven to 350* drop dough by heaping tbsp, 3 inches apart on un-greased cookie sheet. Bake 12 minutes, until golden. Cool on Rack. Cookies Freeze well.
